In 2016, Michigan State University
used spoiled mayo as an energy source.
After 1,250 gallons of mayonnaise went
bad in the cafeteria, their sustainability
department was determined to keep it
out of the landfill. So, they emptied 500
containers of mayo into an anaerobic
digester, which broke it down into gases
that generated heat and electricity and
